I replaced the sugar with coconut sugar, the butter with coconut oil and used dairy free mini chocolate chips.
A quick and easy recipe that makes excellent cookies. I usually make them from scratch (no all purpose mix). Loved the fact I only one type of flour to measure, it felt like my pre-GF days. Will definitely make again and agin.

Ingredients
- 1/2 cup Butter, unsalted for pan
- 1/4 cup Sugar
- 1/2 cup Golden Brown Sugar, packed
- 1 Egg, large
- 1/2 tsp Vanilla Extract, pure
- 1-1/4 cup Flour, Cuisine Soleil All purpose mix
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 cup Chocolate Chips, bittersweet
Directions
- Preheat oven to 350F (176C)
- Blend butter sugars, egg and vanilla in mixer until creamy and fluffy
- Mix dry ingredients and add slowly to wet ingredients in mixer until incorporated
- Fold in Chocolate Chips
- Drop spoonfuls on parchment lined baking sheet and bake for approximately 12-14 minutes or until golden on bottom
- Cool completely on tack and store in airtight container
